Harper's Tailor
Ingredients
- 2 Strawberries, halved
- 3 Jalapeño slices
- 15 ml Simple syrup
- 15 ml Passion fruit syrup
- 30 ml Freshly squeezed lime juice
- 45 ml Tequila
- 1 Sugar cube soaked in 151 overproof rum
- 1 Lime wheel
How to make it
- Muddle the strawberries and jalapeño with the simple syrup.
- Add the passion fruit syrup, tequila and lime juice, and shake for 10 seconds.
- Strain over crushed ice, but do not double strain — the small flecks of strawberry should come through into the drink.
- Fold the lime wheel into a little boat so it holds the rum, place the sugar cube on it and add the 151.
- Set it on the drink and light it.

- A strawberry on the rim, and a burning sugar cube on a folded lime wheel
