Barracuda

Ingredients

• 45 ml Puerto Rican gold rum (originally Ron Palo Viejo Gold)
• 7.5 ml Galliano L'Autentico liqueur
• 45 ml Pineapple juice
• 7.5 ml Lime juice
• 2.5 ml Rich sugar syrup 2:1
• 30 ml Brut champagne or sparkling wine

How to make it

1. Shake the first five ingredients with ice and fine strain into a chilled glass.
2. Top with champagne.

The Story Behind It

The mixologist was introduced to the Barracuda at The Connaught Bar in London in September 2022 — at the time the reigning best bar in the world. After some experimenting at home, this is the version he finds the most flavourful. The drink itself dates back to 1965, when it was created by Benito Cuppari.
